First name

It was inspired by the mythical Iberian city of Cypsela, which according to legend disappeared under the waters of the Mediterranean.

Elaboration

The grapes were carefully selected by hand at the time of harvest. Once the rapa was separated, the must macerated in contact with its skins for 4 hours; the wort drained by gravity was then separated from the rest and led to the fermentation tanks. The fermentations were prolonged for 20 days, at a controlled temperature of between 17-20ºC. Prior to bottling, it was filtered and stabilized at -3º temperature.

Tasting note

Pale pink color. Floral notes of jasmine, orange blossom and gardenia and citrus notes stand out in aromas. In the mouth it is a fresh, broad and persistent wine.
