The North “Tramuntana” wind, called Cercium in the chronicles of the Roman historians, has always affected the character of the people and the wines of the Empordà.
The CERCIUM wine comes from the vineyards of Mas Llunes, grown in Garriguella on harsh land strongly influenced by this strong north wind.
Wine-making
The different varieties were fermented separately in stainless steel fermentation tanks kept at a temperature of 20ºC. Two pump-overs per day were carried out, and the tanks were emptied 20-30 days after the start of fermentation, depending on the variety. Prolonged vatting was determined by tasting.
Malolactic fermentation took place in the tank.
The wine underwent minimal clarification and filtering treatment before being bottled.
Blend
Red Grenache (46%), Carignan (18%), Syrah (18%) and Cabernet Sauvignon (18%)
Tasting note
Cherry colour with violet edges. The aroma is fresh, expressive, intense, spicy, wild herbs and very fruity. The palate is fresh, round, structured, tasty, and very fruity with discreet notes of well-integrated oak.
